Here is a story that goes way back on peri-peri.
The Roots of the Spice
Peri- peri is the Swahili word for chilli peppers. It routes back to the Portuguese colonised to Africa primarily in Angola and Mozambique.
Peri-peri also known as “piri-piri”, is made from chilli peppers, garlic, herbs and lemon. This works best with grilled chicken that is cooked over an open flame.
Cooking Chicken Skin On or Off
Crispy chicken skin is just divine, with a hint of flames and juices dripping off of the skin. To achieve this is no easy task, you need your temperature to be just right otherwise you won’t enjoy the taste of black crisp skin, that’s for sure.
If your coals are too hot, your skin will burn before the juicy meat cooks. Medium to low is the best to cook chicken over a soaring grill. This way you will crisp the skin just right and avoid any flair ups.
Chicken can be tough to cook, but here at Portugrill the chicken is cooked to perfection.
The white meat is juicy and the skin is crisp to your liking. You will have an option of cooking flavours such as, lemon and herb or peri-peri. These flavours will boost your chickens taste to another level.
Your chicken will be cooked in perfect temperatures and cooked to perfection.
